Filipino Recipes - Ginataan Or Binignit - Pinoy Food

The locals of the Visayan Islands are known for their fasting and abstinence while the Holy Week. Because they refrain from eating any meats while the Lenten Season, they commonly prepare the ginataan or binignit for the whole family.

This appetizing and satisfying snack is also ready while the rainy season. It is efficient in taking away the cold and gloom that is commonly felt when there is rain. I especially love it when the whole house is gathered nearby the table while snack time since no one can go out due to the rain.

Traditional Food

What I love most about this snack is the fact that I get to eat some root crops plus the banana makes it more worthwhile. I admittedly love the taste of bananas made even more appetizing by the flavor of cooked coconut milk.

Ingredients:
2 pieces yellow camote or sweet potatoes (cubed) 1 piece white gabi or taro root (cubed) 1 piece ube or purple yam (cubed) 4 pieces ripe saba banana (sliced) 6 pcs ripe langka or jackfruit 4 tbsps landang or tapioca 2 cups coconut milk 1 cup coconut milk, diluted with water 1/2 cup sugar 1/2 tsp salt Cooking Instructions:
Place the diluted milk in a large pot and add the bananas, ube, camote and gabi. You can also save a lot of time by boiling the hard ingredients first before adding to the diluted coconut milk. Add the landang or tapioca, salt and sugar. Add the langka strips and simmer until the combination is thick and all the ingredients are tender. Pour in 2 cups of coconut milk and adjust the heat to medium. Do not bring to a boil to preclude curdling of the cooking liquid. Place in small serving bowls and serve.
